Taste The Change - page 29

My brother and I together came up
with the nettle-curry soup. During my
freelance writer years when I invited
friends for a dinner – and there were
often 10-30 of them – I cooked this soup
almost every time because it is tasty
and costs next to nothing. I always
picked the nettles myself in the early
summer and then dried them for use in
the winter.
I developed the red pike dish at our
summer cottage where pike is a very
common catch. Pike is not appreciated
in Finland although there are a lot of
this kind of fish in many lakes, but when
seasoned properly, you can get pretty tasty
food from it. I like to season them in a way that
is not very traditional in Finland.
