My wife and I take part in a short supply-chain
initiative run by a local organic farmer, who
provides us with a weekly box of vegetables. One
week we had a lot of aubergines in the
box, so I was looking for a good recipe
and consulted one of my favourite
cookbooks (Feast by Nigella Lawson).
I was in an Italian mood. The sun
was shining and I chose Nigella’s
involtini recipe. It has since become
one of our classic dishes with its
great flavours and makes any
meal a special occasion.
