We came up with this side dish/meal, which has become a favourite of ours, on
a cold winter’s day when we did not have enough potatoes. This is a very tasty,
climate-friendly dish that is great value for money, for which it should be easy
to find organic and locally produced vegetables. Root vegetables used to be
a poor man’s food but today it is food for an enriched life. Oven-baked food is
underestimated, but many things you fry in a pan
are tastier and healthier if they are cooked in
the oven instead. Yes, it takes time, but cooking
dinner together is a wonderful way of spending
your time. Root vegetables generally have lower
pesticide residues than fruit and it is very
rare to find any residues (contamination)
at all in organic vegetables. Food must be
a source of pleasure and culture, not
of anxiety and monoculture. That is
why it is important to ban endocrine-
disrupting pesticides and fight for
freedom and diversity of seeds.
